Oyster mushroom and spinach strata
4 cups fresh chopped Oyster mushrooms
1/2 cup chopped onion
3 cups fresh spinach
1/2 cup shredded mozzarella,1/2 cup shredded swiss
2 tablespoons butter
5 cups cubed french bread
6 eggs beaten
1 3/4 cups milk,1/2 cup heavy cream
1/4 teaspoon black pepper,1/2 teaspoon salt,1/4 teaspoon garlic powder
Preheat oven to 325
Saute onions and mushrooms in skillet with butter until soft,add spinach and cook until wilted remove from heat.
Mix swiss and mozzarella together in bowl
In a greased 2 quart baking dish add half of bread cubes and top with mushroom mixture and cheese.
Top with remaining bread cubes
In a mixing bowl combine eggs,cream,milk and seasonings and whisk together. Pour egg mixture over bread,cheese and mushroom mixture.
Bake uncovered for 45-55 minutes or until the center is set.
Let stand 5-10 minutes before serving.
